"La Creme Glacee" Oreo creme filling cupcakes=]

A few friends have requested that I do a cookies and creme tutorial...I had a bunch of oreos at home so I kinda decided to do the best of both worlds!=] So here it is! Ok, for this recipe you will need the following: 
  1. 24 Oreos that are pulled apart...creme side up! 
  2. 2.5 cups of all-purpose flour
  3. 1 tsp. baking powder
  4. ½ tsp. salt
  5. 8 tbsp. unsalted butter
  6. 1 2/3 cup sugar
  7. 3 large egg whites
  8. 2 tsp. vanilla extract
  9. 1 cup milk
  10. a few drops of white chocolate mocha creamer
  11. crushed up Oreos...the more and bigger, the better! 
  12. Cookies and creme pudding mix





Okay, this first step is to preheat your oven to 350 and line your tins with liners and one oreo pulled apart...creme side up! 

 combine all of your dry ingredients minus the sugar! So: flour, baking powder, salt and the dry pudding mix and then mix with a fork for a few moments. 



After all the dry ingredients are combined, set it to the side and mix your butter and sugar until very fluffy! After that, add all of your wet ingredients : egg whites, vanilla extract, milk and a dash of the white chocolate mocha creamer; then mix!
After you mix, add HALF of your bowl of dry ingredients. Mix until combined!Complete adding the rest of your dry mix into the thickening batter. It should end up looking like this:
Crush up your Oreos and fold into the batter.

Spread the batter evenly throughout the pan. 


Bake at 350 for 20 minutes...rotate the pans 10 minutes through! 




ENJOY! You will find that they were iced with a recipe of icing that combines chocolate melts and chocolate icing. It is then garnished with a white chocolate drizzle! 
TO make JUST the cookies and creme part...don't add the Oreo at the bottom and use a whipped frosting with crushed Oreo's instead!

" Blame It On The Alcohol"Jager Bomb cupcakes!

For St. Patty's day, I have decided to do some alcohol infused cupcakes. My inspiration for this particular recipe   was the popular Jager Bomb. A Jager Bomb, if you don't know, is a drink made of Redbull and Jager . 
On to the yummy stuff! 
Okay, what you will need for this recipe is as follows: a can of Redbull (I used a 12 oz. can, you can use more or less..it doesn't really change the taste...just the amount of caffeine.), 1/2 cup of Jager, 1/3 cup of suger (do NOT use more than this...it will be wayyyyy to  sweet), 1.5 cups of flour, 1/2 cup of butter, 1.5 cups of confectioners sugar, a tbs. of corn starch, 1 cup of half and half (half whole milk half cream) and .5 oz of: red, brown and green food coloring. 
The first step is to pre-heat your oven to 375 and put a bowl of water in the oven as well. This will help the insides cook nicely and the edges won't brown! Then, mix the redbull and the half and half.
Next, add the sugar! Remember, do NOT over do it! You will regret it! lol. 
Add the flour next! 
Add .5 of red coloring and .5 of brown!



Then mix! After everything is mixed, put the cupcakes into the tins! Make sure you only fill each tin half way up! Bake for 25 minutes on 375. While your cupcakes are in the oven, you can start working on the Jager creme filling. Put 1/3 cup of half and half of milk on the stove on low. While it warms up, mix a tbs. of corn starch with a little bit of corn starch. Just enough for it to become into a paste. Stir the paste into the milk , along with 1/3 cup of Jager and then add .5 oz of green food coloring. Now is the time to taste the creme to see if you would like to put more Jager in it or not! 


I have noticed that some little lumps of corn starch remain even after it has cooked...this can be solved by sifting the mixture into another bowl so that it can cool off to the side. While the creme is cooling, make sure that your cupcakes are in good shape, and if they are take them out to cool. Do NOT put the creme in or frost until it is COMPLETELY cool. On to the frosting!
Mix 1/2 cup of butter and 1.5 cups of powdered sugar together to a fluffy texture.
Then add a FEW drops of Jager to the Icing and 2 drops of brown GEL coloring. Don't put too much Jager in the icing. It will get gross! 
Take a ziplock bag and turn it inside out...scrape all the icing into the bag and turn it back the right way.
Cut a tiny hole in the corner of your bag and pipe as desired! 

If you choose to make Jager Bomb shooters, take the cupcake you made and mush it up inside the shot glass evenly and pipe the icing evenly on top of the cake! Party City sells some shooters for super cheap!

Peanut Butter Jelly Time!

Today, I made peanut butter and jelly cupcakes!=] I had a lot of fun making them! Please find pics and instructions on how to make it!
The ingredients you will need are: 2 cups of flour, 1/2 tsp. of salt 1/2 tsp of baking powder, 1/2 cup sugar, 1/2 a cup of melted butter, 1/2 cup of crunchy peanut butter, 1/2 cup of nutella,1/3 cup of peanuts (if desired), 2 eggs, a cup of milk, a cup of seedless grapes and a fourth cup of some stirred grape jelly. I forgot to put my peanuts in the picture below! =X Don't mind me!
First, sift together all of your dry ingredients: flour, sugar,salt and baking powder! 
Then, mix together all of your "wet" ingredients: peanut butter, nutella ,jelly & eggs!
After mixing the "wet" ingredients, add eggs. Mix the eggs in one at a time completely! 
The next step is to alternate adding the flour & the milk into the mix. Start with the dry mix and end with it as well.



 After combining the dry and wet ingredients, fold in the peanuts and red grapes. 
The batter will be thick, but that is okay! The outcome is SO yummy!! 
I added my locally famous peanut butter icing and garnished with chocolate chips! For the recipe for that, just ask! =] 
I had so much fun just creating and being me in my kitchen today. Its nice to have a break from custom orders, even though I love them so much! =]

Why I am starting my blog.

Hi, friends=] I decided to make this blog in order to document my journey through the world of baked goodies. I am so happy that I have discovered baking as a hobby of mine. Before baking, I was in a world that was monotonous and repetitive. I had no hobby of my own that I could run to and escape with. I was working a 9-5 that I was miserable with as a director of a preschool. I felt so guilty that I spent my days watching children that were not mine rather then watching my own at home. Due to a few personal events, I decided that I was in the wrong place and I shifted my focus to being a great stay at home mom. Baking is what makes me happy.
